Instructions

Preheat Oven – Preheat your oven to 175°C (350°F). Grease a 9×5 inch loaf pan or line it with parchment paper.

Mix Dry Ingredients – In a medium bowl, whisk together flour, baking soda, and salt. Set aside.

Cream Butter and Sugar – In a large bowl, beat the butter and sugar until light and fluffy.

Add Wet Ingredients – Add mashed bananas, eggs, vanilla extract, and sour cream (or Greek yogurt) to the butter mixture. Mix until smooth.

Combine Wet & Dry – Gradually fold in the dry ingredients until just combined. Do not overmix.

Add Pineapple & Coconut – Gently fold in chopped pineapple and shredded coconut.

Bake – Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
